In the Making: Gluten Free Irish Soda Bread Round 3
Ladies and gentlemen, I am giving up. This recipe is not working and I do not know what to do with it. So I think that I will have to do what I said I wouldn't do in the beginning: I am going to use a recipe. I was looking through Pinterest and I found a recipe for gluten free Irish soda bread, so I am going to try out this recipe and see if it works. If it does work, then I will post pictures and the recipe here on my blog with links to the original site.
Well, I first wanted to start making this after helping Mama Ramey make Irish soda bread at a St. Paddy's day party. Her recipe was simple, just flour, baking soda, salt and buttermilk; so I assumed that I could take that recipe, use a 1-1 gluten free blend and make it work. However, all of my attempts have turned out really dense and under-baked. I have tried all of the fixes that I could think of but nothing is seeming to work.
While I have not given up on trying to perfect a loaf of gluten free Irish soda bread, I have given up
on trying to use this recipe. I just don't think that it will work with gluten free bread. For those who are curious as to what recipe I am using I will provide it at the end (just know that it hasn't worked for me but if you want to try it you are more than welcome to it. And if you make it work please let me know what your methods are). Anyways, I will try the recipe that I found on Pinterest and I will keep you posted on how it turns out. I will also probably have my friend Lacey come over and help me with it since she is a baker and I can use all the help I can get. But in the mean time I am going to take a break from bread and try a dessert.
3 cps gluten free flour
2 cps buttermilk
pinch of salt
tsp of sugar
3/4 tsp xantham gum
3/4 tbs baking soda

New Recipe
I probably won't be doing a baking post this next week since I am supposed to be doing a post chosen by one of you faithful readers. However, the week after next, Jared will be visiting and he he can be my guinea pig and try out what I make. The plan is to make some brownies. Now these are not your ordinary run-of-the-mill brownies, no sir. I am going to make some of my world famous box mix brownies. Now, my recipe for these changes quite a bit depending on the mood I am in and what I am craving (also what might go well in a brownie). This time I think I will make Chocolate and Espresso Lovers Brownies, I am going to make the brownies as usual but I am going to add some instant coffee mix into the water that you add into the brownies. So we shall see what happens with those. Maybe, if I am feeling adventurous I will buy another box and make even more brownies.Irish Soda Bread Recipe (failure)
